Butter Chicken Fry

Today's I am posting very very simple chicken fry with butter.In this fry there is not need of onions and tomato's.Just you need ginger garlic paste,chilli and coriander powder.It tasted very delicious you can have this like a side dish or with rasam.Here goes the recipe.. 


Chicken with bones-250grams

Ginger garlic paste-1tsp
Chilli Powder-1tsp
Coriander Powder-1tsp
Pepper Powder-1/2tsp
Salt as per taste


Take a bowl,add all the ingredients expect butter and mix.Marinate it for 1-2 hours or overnight. Heat a pan with butter,once it melts add the marinated chicken to it and saute well,so that chicken pieces are completely coated with butter.Cover it and cook on medium-low heat for 10 minutes and stir in the middle to prevent burning.Again cover and cook for another 10 minutes or till chicken is cooked.Garnish with coriander leaves and serve.

Coffee and Walnut Cupcakes

Just now i finished making these lovely and yummy cupcakes.I made these cupcakes for my friend,whom we are visiting tomorrow for lunch.These cupcakes are really very easy to do,just add all the ingredients to one bowl and beat on medium to low speed for 2 to 3 minutes and bake it for 20 minutes.Here goes the recipe.. 

Makes 12
Cooking time 20 minutes


Self-raising flour-150g
Baking powder-1/2tsp
Golden caster sugar-125g
Espresso coffee powder-2tsp
Boiling water-2tsp
Chopped walnuts-50g
Salt a pinch

Coffee butter cream :
Espresso coffee powder-1tsp
Boiling water-2tsp
Unsalted butter,softened-100g
Icing sugar-150g
Walnut halves,to decorate


Preheat oven to 180C.
Line a 12-section bun tray with paper cake cases.
Blend the coffee powder with the boiling water.Put the butter,caster sugar,egg,flour and baking powder in a bowl.Add the coffee and beat with a electric hand mixer for 2 to 5 minutes  on medium to low speed until light and creamy.Stir in the chopped walnuts.Divide the cake mixture between the paper cases.

Bake in a preheated oven 180C for 20 minutes or until risen and just firm to the touch.Transfer to a wire rack to cool.

For Coffee butter cream:

Blend the coffee powder with the boiling water.Beat the butter and icing sugar in a bowl until pale and creamy.

Put the butter cream in a piping bag fitted with a star nozzle and pipe swirls over the tops of the cakes.Decorate each with a walnut half.
